Winter fruit compote

You can still have something sweet on the Vow to Wow plan with Sally's Bee's winter compote. Using plums and figs, it's perfect for a delicious, healthy breakfast!

Ingredients

Use plums and fresh figs – you can also add apples and pears if you like.

Method

  • Halve the figs and the plums and take out the plum stones

  • Wash any other fruit and cut into similar sized chucks as the halved plums

  • Drizzle with 2 tablespoons of runny honey, 1 teaspoon of cinnamon and a shake of aniseed if you have some. You can also add some raisins if you fancy!

  • Roast in the oven at 200˚C for 25 minutes until fruit has softened

Eat warm or cold with porridge or yoghurt and store in the fridge in an airtight container for up to 3 days.
