Dr Amir's Stuffed Sweet Potatoes
Stuffed Sweet Potatoes Recipe
(Serves 4)

Ingredients:4 medium-sized sweet potatoes 60g walnut halves, crumble a few 400g tin chickpeas, drained 300g frozen broccoli florets (thawed), cut into small pieces Handful of pumpkin seeds Drizzle olive oil 1 tsp paprika 1 tsp smoked chipotle powder Pinch of salt 100g feta cheese, crumbledOlive oil for drizzlingJuice of 1 lime

Method:
Prick the sweet potatoes with a fork and air fry at 200c for 35 minutes or until tender.
In a bowl mix the walnuts, chickpeas, broccoli, pumpkin seeds, olive oil, paprika and smoked chipotle powder with a pinch of salt. Air fry the mixture for 8-10 minutes at 200c.
Slice the potatoes in half lengthways and top with the air fried chickpea/walnut/broccoli mixture. Crumble the feta cheese on top and drizzle with olive oil and fresh lime juice.
