Sardines on toast
Sally Bee's sardines on toast are on the Vow to Wow plan. They're a super quick breakfast option for when you need to rustle something healthy up at short notice.
Sally says: "Sardines are packed with goodness, such as omega-3 fatty acids, protein, iron and zinc, and make a really quick and easy snack."
Ingredients
Serves 4
120g/41/2oz can sardines in tomato sauce1 celery stick, finely chopped1/2 red (bell) pepper, deseeded and finely chopped1 spring onion (scallion), thinly sliced1 tbsp sun-dried tomato purée (paste)2 tbsp lime juice Celery salt Freshly ground black pepper4 thick slices of wholemeal (whole-wheat) or multigrain breadOlives or a watercress sprig to garnish
Method
Lightly break up the sardines in a medium-sized bowl with a fork. Add the chopped celery, red (bell) pepper, spring onion (scallion), tomato purée and lime juice to the sardines.
Season lightly with celery salt and freshly ground black pepper
Toast the bread slices on both sides until golden
Spoon the sardine mixture over the toast to make an open sandwich and add the olives or watercress to garnish. Serve immediately.
Sally's tip: Feel free to swap the sardines for pilchards.
