Sardines on toast

Sally Bee's sardines on toast are on the Vow to Wow plan. They're a super quick breakfast option for when you need to rustle something healthy up at short notice.

Sally says: "Sardines are packed with goodness, such as omega-3 fatty acids, protein, iron and zinc, and make a really quick and easy snack."

Ingredients

Serves 4

120g/41/2oz can sardines in tomato sauce1 celery stick, finely chopped1/2 red (bell) pepper, deseeded and finely chopped1 spring onion (scallion), thinly sliced1 tbsp sun-dried tomato purée (paste)2 tbsp lime juice Celery salt Freshly ground black pepper4 thick slices of wholemeal (whole-wheat) or multigrain breadOlives or a watercress sprig to garnish

Method

  • Lightly break up the sardines in a medium-sized bowl with a fork. Add the chopped celery, red (bell) pepper, spring onion (scallion), tomato purée and lime juice to the sardines.

  • Season lightly with celery salt and freshly ground black pepper

  • Toast the bread slices on both sides until golden

  • Spoon the sardine mixture over the toast to make an open sandwich and add the olives or watercress to garnish. Serve immediately.

Sally's tip: Feel free to swap the sardines for pilchards.
