Light puff pastry pizza
On the Vow to Wow plan, even pizza is made in a healthier way. Light puff pastry makes this dish very quick to make, lots of colourful vegetables add the nutrition and a little bit of extra mature cheese adds the extra flavour without too much fat!
Ingredients
Serves: 2
1 packet ready rolled ‘Light’ puff pastry 2 tbsp tomato puree ½ sliced onion½ sliced pepperSmall handful of sliced mushroomsDrained, tinned sweetcorn (or thawed, frozen sweetcorn)2 oz grated mature cheese1 pinch dried oregano
Method
Preheat the oven to 220°C / Gas Mark 7
Line a baking tray with parchment paper and place the rolled out pastry on the paper
Cut into the pastry slightly to indent a 1 cm border. Be careful not to go right through the pastry to the other side.
Spread on the tomato purée within the border of the pastry
Sprinkle over the sliced vegetables– you can add anything you like as long as it’s healthy. No fat loaded salami!
Add the mature cheese and the dried oregano
Bake in the oven until risen and golden, about 20 minutes. Serve.
