Cajun chicken toastie
Two of Sally Bee's lunches on the Vow to Wow plan feature the deliciously spiced cajun chicken with lemon. This time, create a toastie and enjoy it warm!
Ingredients
Serves 4
4 Good sized skinless chicken breast portions2 tbsp Cajun spice mixDrizzle extra virgin olive oil
For the salad:
Iceberg lettuceWatercress (Sally recommends the bags with beetroot strips in for added goodness)1 ripe avocado1 red pepperSweet chilli sauce to serve1 tomato, sliced
Method
Dust each of the chicken breast portions with the cajun spices and leave to marinate in the fridge for 10 minutes
In a large, non-stick frying pan, drizzle a little olive oil and cook the chicken for 6-8 minutes on each side. Make sure the chicken is cooked all the way through.
Set the chicken aside for a few minutes to rest while you arrange the salad
When ready to serve, slice the chicken portions through at a slant and pop on top of the salad
Put the chicken and salad into a wholemeal pitta and cook in a toastie grill
