Bortolli bean soup
This delicious soup from Sally Bee's Vow to Wow plan is perfect for wintery days when you need something nutritious and warming.

Ingredients
Serves 4
2 tbsp olive oil2 cloves garlic, minced1 onion, finely chopped1 carrot, finely chopped1 stick celery1 small leek, finely chopped400g tin borlotti/ butter or black eyed beans1 handful parsley, finely chopped1.5 litres Low salt vegetable stock4 cherry tomatoes, quartered1 sprig thyme
Method
Heat the olive oil in a large saucepan and sweat the onions, carrot, celery and leek
Stir in the borlotti beans and chopped parsley
Next add the stock, cherry tomatoes, thyme and garlic
Bring to the boil, then reduce the heat, cover with a lid and simmer for 50 minutes
