Baked sweet potato with tuna

Sweet potatoes are a tasty and nutritious alternative to your regular baked potato! Full of vitamins B-6, C and D, they're packed to the rafters with immune-boosting properties. And since they're a complex carbohydrate, you'll feel fuller for longer - perfect for when you need a filling lunch to prepare you for a busy afternoon!

Ingredients

Serves 1

1 sweet potato¼ chopped red onion½ tsp chilli flakes1 small can of tuna in spring waterFat free crème fraîcheLemon wedges, to serve

Method

  • Prick a sweet potato with a fork

  • Bake at 200˚C for 40 mins

  • Split in half and add the tuna

  • Serve with lemon wedges and a small dollop of fat free crème fraîche
