Baked potato with crunchy coleslaw (and other toppings!)
One of the easiest and healthiest quick meals or light bites is a jacket potato. This is great for all ages, affordable and if you take care with your toppings, it’s seriously healthy too.

Method
Pre-heat the oven to 200°C
Wash your potato and prick 2 or 3 times with a fork
Place in the oven and back for 50-60 minutes depending on the size. You can tell when the baked potato is cooked as the skin will be lovely and crisp but the inside soft when you squeeze it.
If you are in a hurry, you could start the cooking off in the microwave following the manufacturers instructions and then finish off to crispy up in the oven for 10 minutes
Curry-Spiced Topping
1 tbsp fat free plain yoghurt 2 tsp chopped parsley½ teaspoon mild curry powder
Tomato PestoTopping
1 tbsp shop bought green pesto 1 chopped plum tomato
Creamy Horseradish Topping
1 tbsp reduced-fat sour cream ½ tsp prepared horseradish
Creamy ChiveTopping
1 tsp low-fat cottage cheese 2 tsp chopped fresh chives
Tex-MexTopping
1 tbsp refried beans1 tbsp prepared tomato salsa 1 tsp chopped fresh cilantro
ColeslawTopping
6 tbsp fat free crème fraîche½ tsp Dijon mustard2 tbsp low fat mayonnaise½ white cabbage, shredded2 carrots½ an onion
Fruity Booty Topping
Fresh pineapple chunks1 diced apple 1 tbsp raisins 2 tbsp fat free crème fraîche
Butterbeans and Tuna Topping
Drained tuna fish in spring waterA small can of butter beans, drainedJuice of 1 lemon2 tbsp low fat mayonnaise
