Last minute cheat: Spiced nuts
James Tanner puts a festive spin a classic Christmas snack of festive nuts.
Ingredients
700g mixed nuts1/2 tsp ground cinnamon1/2 tsp ground cumin1/2 tsp cayenne pepper6 tbsp brown sugar4 tbsp unsalted butter1 tsp fine salt1 tbsp water
Method
Heat the nuts in a dry non stick pan stirring constantly to toast slightly, then add the butter stir into the nuts and let them colour a little so golden brown, next add the sugar, salt, spices and water cook until the nuts are completely glazed in the ingredients stirring constantly for around 4 minutes.
Lay a sheet of grease proof paper on a baking tray and pour the nuts onto the tray separate them with a fork if any are stuck together and leave to cool completely. You can store in an air tight container.
