James Tanner's Christmas cheese straws
James Tanner makes sugar and spice cheese straws to serve up as party snacks this Christmas season.
Ingredients
200g ready rolled puff pastry80g parmesan cheese1 tbsp Thyme leaves1tsp smoked paprikaPinch sea salt1 tbsp castor sugar1 egg – for egg wash2 tbsp water
Method
Form puff pastry into a 10-inch square. Lightly coat the square with egg wash.
Sprinkle the lower half of the pastry with Parmesan, smoked paprika and picked thyme leaves
Fold top of pastry down to cover lower half
Lightly roll over with a rolling pin to ensure the two sides are stuck together
Cut into 1⁄2 inch wide strips, glaze with water and sugar solution
Pick up each strip and twist twice, lay on a non-stick baking sheet, lightly sprinkle with rock salt and bake in the oven, at 180 Celsius, for 8 to 10 minutes or until lightly golden brown
Cool strips on baking rack.
