Tuna with mediterranean vegetables

Sally Bee combines tuna steaks with mediterranean vegetables for a delicious and healthy lunchtime meal on the Vow to Wow plan.

Ingredients

Serves 4

4 tuna steaks, 6-7 oz each30-45ml/2-3 tbsp olive oil3 garlic cloves, finely chopped1 red onion, finely diced60ml/4 tbsp dry white wine3 ripe plum tomatoes, chopped1 red pepper, sliced1 tsp dried Italian herbsFreshly ground black pepperFresh basil leaves, to garnish

Method

  • Season the tuna steaks with pepper

  • Set a heavy frying pan over high heat until very hot, add the oil and swirl to coat

  • Add the tuna steaks and press down gently, then reduce the heat to medium and cook for 6-8 minutes, turning once, until just slightly pink in the centre

  • Transfer the steaks to a serving plate, cover and keep warm

  • Add the diced onion, sliced pepper and garlic to the pan and fry for 4 minutes, stirring all the time, then add the tomatoes and wine and boil until it is reduced by half

  • Season with pepper and pour over the fish steaks

  • Serve garnished with fresh basil leaves.
