Tuna with mediterranean vegetables
Sally Bee combines tuna steaks with mediterranean vegetables for a delicious and healthy lunchtime meal on the Vow to Wow plan.
Ingredients
Serves 4
4 tuna steaks, 6-7 oz each30-45ml/2-3 tbsp olive oil3 garlic cloves, finely chopped1 red onion, finely diced60ml/4 tbsp dry white wine3 ripe plum tomatoes, chopped1 red pepper, sliced1 tsp dried Italian herbsFreshly ground black pepperFresh basil leaves, to garnish
Method
Season the tuna steaks with pepper
Set a heavy frying pan over high heat until very hot, add the oil and swirl to coat
Add the tuna steaks and press down gently, then reduce the heat to medium and cook for 6-8 minutes, turning once, until just slightly pink in the centre
Transfer the steaks to a serving plate, cover and keep warm
Add the diced onion, sliced pepper and garlic to the pan and fry for 4 minutes, stirring all the time, then add the tomatoes and wine and boil until it is reduced by half
Season with pepper and pour over the fish steaks
Serve garnished with fresh basil leaves.
