Salmon and spinach pasta
Sally Bee's spinach and salmon pasta is on the Vow to Wow plan. This is a quick and easy dish, perfect for when you crave those calorie laden cheesey sauces!
Sally says: "Try to use wholewheat pasta – this will fill you up more which means you wont need such a big portion."
Ingredients
100g spinach150g fresh salmon fillet1 clove garlic, peel and finely chopped¼ teaspoon dried chilli flakes110 g dried wholewheat pasta – any shape!Freshly ground black pepperJuice of half a lemon100g low fat crème fraîche2 tbsp fresh dill - chopped
Method
In a non-stick frying pan heat the olive oil over medium high heat
Add garlic and dried chilli flakes, sauté for 30 seconds
Add salmon fillet and cook for 3 minutes on each side. Take off the heat and set aside.
Meanwhile, cook pasta according to package instructions in boiling water, adding the spinach 3 minutes before the end of cooking time
Drain well, return to the saucepan and add lemon juice and low fat crème fraîche. Stir over low heat for 1 minute.
Prepare the salmon by removing any skin and bones and cut into bite sized pieces. Add to pasta, toss gently and serve, sprinkled with freshly ground black pepper and dill.
