Sally's go-to granola bars
Sally Bee has been teaching our dieters about a healthy breakfast, but what about the period of time between breakfast and lunch? She joins Lorraine in the kitchen with some simple low fat snack ideas, including these go-to granola bars!

Ingredients
200g old-fashioned porridge oats140g flaked almonds93g desiccated coconut (optional)3 tbsp unsalted butter230g runny honey50g light brown sugar1 1⁄2 tsp vanilla extract70g juicy raisins70g chopped dried apricots70g dried cranberries
Method
Preheat the oven to 180C/Gas mark 4
Butter a 20cm by 27cm baking dish and line it with greaseproof paper
In a large bowl, toss the porridge oats, flaked almonds and coconut (if using) together and pour onto a baking tray. Pop in the oven to brown for 10 minutes, turning once.
Transfer the mixture back to the large mixing bowl and set aside
Reduce the oven temperature to 150C/Gas 3
Next place the butter, honey, brown sugar and vanilla extract in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oatmeal mixture.
Now add the raisins, chopped apricots, and cranberries and stir well
Pour the mixture into the prepared pan. Wet your fingers and lightly press the mixture evenly into the pan. Bake for 25 to 30 minutes, until light golden brown.
Cool for at least 2 to 3 hours before cutting into squares.
