Rainbow trout parcels

Rainbow trout are quite delicately flavoured and this very simple and quick dish from Sally Bee brings out the best of their gentle flavours.

It's also quite an economical meal and, like salmon, contains omega 3 fish oil to help keep your heart healthy. Delicious!

Ingredients

2 rainbow trout fillets1 tbsp olive oil½ tsp freshly ground black pepper2 cloves garlic, sliced1 fresh red chilli, sliced1 lemon sliced

Method

  • Preheat oven to 200°C / Gas mark 6. Rinse fish, and pat dry.

  • Rub fillets with olive oil, and season with black pepper

  • Place each fillet on a large sheet of aluminium foil

  • Top with garlic and chilli slices, and squeeze the juice from the ends of the lemons over the fish. Arrange lemon slices on top of fillets.

  • Carefully seal all edges of the foil to form enclosed parcels. Place parcels on baking tray.

  • Bake in preheated oven for 15 to 20 minutes, depending on the size of fish. Fish is done when it flakes easily with a fork.
