Fabulous frittatas
Sally Bee's frittatas are a kind of Italian omelette, but filled with lots of tasty vegetables, dried or fresh herbs, cooked chicken, low fat cheese, or even leftover pasta! Try one on the Vow to Wow plan as a healthy lunch.
Sally says: "In the battle for good health and to help keep the pounds off, you can afford to include lots of high protein, low fat and low carbohydrate dishes into your cooking such as these frittatas! If you keep the leftovers in the fridge you can eat it cold the next day!"
Ingredients
This makes a large frittata
6 large eggsFreshly ground black pepper12 teaspoons of milk (you need two teaspoons of milk per egg if you want to increase or decrease your quantities)1 onion diced fairly small1 cup of chopped mixed peppers (frozen are fine if you want to make it really easy)½ cup of chopped mushrooms½ cup frozen peas50g of chopped cooked chicken (optional)25g of 50% less fat Feta cheese, crumbled very fine (optional)1 tablespoon of olive oil30 to 36cm deep ovenproof frying pan½ teaspoon of your favourite herbs
Method
Preheat the grill to high
Heat the oil in the frying pan and sauté the onions over a moderate heat for 3-4 minutes
Add the pepper and continue frying for a further 3-4 minutes, then add the rest of the vegetables, lastly adding the cooked chicken if using
Break the eggs into a bowl and add the seasoning, the milk, any herbs you are using and, lastly, the cheese if using
Pour the egg mixture over the cooked vegetables and cook for a further 2-3 minutes until the egg is starting to set underneath
Transfer to under the grill and cook for a further 3-4 minutes until brown on the top and cooked through
