Mixed Vegetable Curry and Easy Flatbread

Reducing our processed and red meat intake has been shown to reduce the risk ofbowel cancer. This doesn’t mean becoming vegetarian, it just means becomingflexitarian – eating more plant based through the week than meat. Vegetables havenatural substances called phytochemicals that may block the growth of cancer cellsor fight inflammation that can fuel cancer.  Vegetables are also high in fibre whichwill benefit your gut microbiome and help keep your colon healthy as well as regulatebowel movements. This curry is a great way to get a huge variety of vegetables andplant-based spices into your weekly diet. 

Curry: Ingredients: 4 tbsp olive oil½ tsp black onion seeds1 tsp cumin seeds1 tsp mustard seeds½ tsp turmeric powder1 tsp chilli powder½ tsp salt1 tsp garlic paste1 tsp ginger paste2 cups water1 white onion, chopped finely4 large tomatoes, chopped3 carrots, sliced into coins8 baby potatoes, chopped into quarters1.5 cups frozen peas2 cups frozen cauliflower floretsRoughly chopped spinach leaves

Method: 1. Heat the oil in a pan, add the black onion seeds, cumin, mustard seeds,turmeric, chilli powder, salt and garlic and ginger paste – stir and add one cupof water. Add the onion and chopped tomatoes and heat for 10 minutes,stirring.2. Then add the carrots and potatoes and heat for another 10 minutes. Add thepeas and cauliflower and the second cup of water and heat for 20-30 minutesstirring occasionally until the vegetables are cooked through. Finally add thespinach leaves and cook for 5 minutes. Serve with flatbread.  Flatbread

Ingredients:300g self-raising flour½ tsp baking powder

150g natural yoghurt1 tsp salt1 tsp olive oilOil and chilli flakes to garnish Method:1. Mix the flour, baking powder, yoghurt, oil, salt and add two tablespoons ofwater adding more until it starts to form a dough.2. Place on a floured surface and knead thoroughly until smooth. Divide intoeight smaller pieces. On a floured surface, roll into ovals using a rolling pin.3. Heat some 1 tsp olive oil in frying pan and lightly fry each bread for 1-2minutes on each side.4. Mix the olive oil and chilli flakes, and brush as a garnish
