Christmas pudding ice-cream

Dean Edwards has the perfect recipe for your Christmas pudding left overs - his delicious Christmas Pudding Ice Cream.

That's if you have any left!

Ingredients:

300g leftover Xmas pudding crumbled50g dried cranberries1 litre tub vanilla ice cream50ml Irish liqueur (optional)50g crushed Amaretti biscuits

Method:

  • Take the ice cream from the freezer and allow to thaw slightly.

  • Scoop into a large bowl then stir through the crumbled pudding, cranberries and the Irish liquor if using.

  • Spoon back into a freezable container until needed.

  • To serve spoon into serving bowls or glasses then top with the crumbled Amaretti biscuits.
