Bubble and squeak nests
Sally Bee's Bubble and Squeak nests are a good way of including vegetables into a much-loved dish and the nests are a bit of fun for the children!
Ingredients
500g of potato200g of finely shredded cabbage (white or Savoy work best)100g of chopped carrot100g of chopped onionPinch of salt and pepperKnob of low fat spread4 large eggs
Method
Place the potatoes in a large saucepan, cover with water, add a pinch of salt and simmer until tender. Remove from heat.
In a separate medium sized pan, put the cabbage, the carrot and the onion and add 5 fluid ounces or quarter of a pint of water with a pinch of salt and bring to the boil, then simmer until just tender, drain and add to the mashed potatoes.
Put the oven onto High
Form into four patties, then make a hollow in each and run a fork around the outside to create a rough edging
Put the patties onto a greased baking tray and put them in the oven for about 10 minutes to brown
In a medium sized non stick frying pan pour in 1 ltr of water and add a shake of vinegar, then bring to the boil
Carefully break the eggs into the water, then reduce to a simmer and poach until the whites are firm but the yolks still runny
Put the nests on a plate, carefully drain the eggs with kitchen paper, then transfer one egg into each nest and serve immediately
