Baked sweet potato with tuna
Sweet potatoes are a tasty and nutritious alternative to your regular baked potato! Full of vitamins B-6, C and D, they're packed to the rafters with immune-boosting properties. 1 sweet potato¼ chopped red onion½ tsp chilli flakes1 small can of tuna in spring waterFat free crème fraîcheLemon wedges, to serve
Method
Prick a sweet potato with a fork
Bake at 200˚C for 40 mins
Split in half and add the tuna
Serve with lemon wedges and a small dollop of fat free crème fraîche
