Asian beef wraps

Sally Bee's Vow to Wow wraps use lettuce instead of tortillas to freshen up an asian beef dish. Make ahead of time for a tasty lunch or make plenty to share as part of a dinner. Delicious!

Ingredients

1 lb lean minced beef (you can also use minced chicken, pork or turkey)1 tbsp olive oil1 cup onion, roughly chopped4 cloves garlic, diced1 inch piece of ginger, diced¾ cup water chestnuts, roughly chopped5 tbsp hoisin sauce1 tbsp low salt soy sauce2 little gem lettuce

Optional toppings:

Shredded carrotsRoughly chopped toasted peanuts or cashew nutsToasted sesame seedsChopped spring onion

Method

  • Heat 1 tablespoon of olive oil in a large pan. Add in the beef and break it apart with a cooking spoon into smaller pieces.

  • Season with salt and pepper to taste and cook till no longer pink. Set aside on a separate plate.

  • In the same pan, cook the onion, garlic, and ginger for 3-4 minutes. Add the meat and water chestnuts into the pan.

  • Stir in the hoisin sauce and soy sauce and cook everything together fora few minutes

  • To serve, place the meat mixture in the lettuce cups and top with shredded carrots, peanuts, sesame seeds, spring onion, and extra hoisin sauce
