James Martin's scrambled eggs masterclass
It was nearly 30 years ago a young James Martin stepped into our TV kitchens, so to celebrate we have an 'anniversary cook', as James throws it back to one his first live TV cooks on The Big Breakfast, when he cooked up a masterclass in scrambled eggs.
He's back all these years later with his famous scrambled eggs for a special throwback!
James Martin's scrambled eggs masterclass
Serves 2
Ingredients
5 large eggs, fresh
25ml double cream
Salt and pepper
25g butter
Serving suggestion 1 (optional)
1 bag baby spinach, wilted with a knob of butter
4 slices smoked salmon
4 crumpets, toasted or 2 slices of sourdough, toasted and sliced in half
Serving suggestion 2 (optional)
4 slices crispy bacon drizzled in maple syrup
4 crumpets, toasted or 2 slices of sourdough, toasted and sliced in half
Method
1. Whisk the eggs in a large glass bowl with the cream and season.
2. In a large non-stick pan, melt the butter until foaming, then add the eggs and cook very gently over a low heat, stirring with a spatula.
3. Serve with any of the above.
Tip: If your eggs start to overcook, add a splash more of cream. Remember to whisk continuously
