Baked avocado with eggs
Our Free From Feb continues this week with a series of meat-free recipes and Dean Edwards kicks it off today with two quick and easy egg recipes, including this nutritious baked avocado with a hint of spice.
(Makes 4)
Ingredients:
2 avocados, halved and stoned4 small eggs½ tsp red chilli flakes (optional)Fresh coriander, to garnish1 lime, cut into wedges
Method:
Place the avocado halves onto a baking tray, using some foil or a ramekin to hold in place. Carefully crack in the eggs, - you may have to scoop out and eat some of the avocado to make room!
Bake in a pre-heated oven set at 180C / gas mark 4 for 18-20 minutes or until the whites are set and yolks cooked to your liking
Remove the avocado from the oven and sprinkle with chilli flakes for a kick. Finally garnish with some fresh coriander if liked and a squeeze of fresh lime.
