Nadia Sawalha's lemon and garlic roasted fish
Nadia Sawalha is back in the kitchen serving up a fresh fish dish that's easy to make and doesn't leave you with loads of washing up!
Serves 4
Ingredients:
2 tbsp pine nuts or flaked almonds
For the veg:
2 onions, thinly sliced in circles20 cherry tomatoes on the vine6 garlic cloves, thinly slicedSalt and black pepper2 tbsp olive oil
For the fish:
A bunch of coriander, finely chopped1 tbsp olive oilZest and juice of a lemon4 x 100g cod loins, or any firm fish8 slices of lemon
Method:
Preheat the oven to 200C/gas 6
Fry the pine nuts or flaked almonds in a little oil and set to one side
Put the onions, tomatoes, garlic slices and seasoning in a bowl and pour in the oil, stir well until covered in oil
Pour onto an oiled baking tray. Bake for 15-20 minutes until the tomatoes are nearly soft and bursting.
In a bowl mix the coriander with the olive oil, lemon juice, and zest and a good sprinkling of sea salt. Then rub the mixture all over the fish.
Remove the roasted tomato mixture from the oven, carefully move the tomatoes around to make space for the fish. Lay the fish in between the tomato mixture. Top with the lemon slices, drizzle with a little oil and seasoning.
Bake for a further 15-20 minutes or until the fish is cooked through and the vegetables are golden. Remove from the oven and top with the reserved nuts.
