Grilled chicken wraps with honey mustard

RecipeIceberg lettuce Chicken breast butterflied and kept whole1tbsp olive oilSalt and pepper to season200g mango (1 large mango chopped into small cubes) 1 red pepper and 1 green pepper chopped into small cubes 2 Spring onion finely chopped 2tbsp French mustard with seeds2tbsp runny honey2 tsp white wine vinegarThyme brush and and plenty of thyme
Method1. Before cooking, season the chicken with salt, pepper and some olive oil.
Using a grill pan, place pan over a high heat and allow the pan to start smoking. Place the chicken straight onto the pan and grill for 2 minutes on one side, then flip and cook for another 2 minutes.
Add the mustard and honey and leave on the grill pan for another 30 seconds. Remove from the pan, along with all the juices and leave the chicken to rest.
Meanwhile chop up all the other ingredients except for the lettuce, then add the juices from the chicken to these vegetables along with some vinegar, season according to taste here. Mix together thoroughly.
To serve, lay down a lettuce cup, fill with vegetables they layer over slices of chicken and serve.
