Christmas SOS: Carrots
Dean Edwards shows us how to make our Christmas dinner veg anything but boring with his carrots, made with orange and star anise.
Ingredients:
400g Chantenay carrots, peeled30g unsalted butter50ml waterJuice ½ orange1 star anise
Method:
Place the butter into a saucepan over a medium heat until melted thenadd in the carrots and star anise and season with salt and pepper
Pour in the water and orange juice and cover tightly with a lid - you may want to use a sheet of foil too to make sure nothing escapes
Lower the heat to its lowest setting then cook for 30-40 minutes, giving a gentle shake now and then to make sure they are not sticking to the bottom of the pan
