James Martin's simple two-ingredient sauce
You can use James' sauce for any combination of ingredients - we're using some sliced ham and sliced broccoli, but you can use any meat, vegetables or beans.
Flavour the sauce with lemon, mustard or spices and herbs and serve with grilled chicken, fish or freshly cooked pasta.
Simple two-ingredient sauce

Ingredients
4 tbsp water
2 tbsp oil or butter
Finely grated zest of half a lemon
Chopped ham and broccoli
Cooked pasta
Method
Heat the water in a pan until it is simmering, then gradually whisk in the oil or butter, to make a smooth, emulsified sauce. Keep the heat low because it will separate if it boils.
At this stage add the lemon zest, ham and broccoli (or whichever ingredients or flavouring you are using) and cook for 2 - 3 minutes
Add the cooked, drained pasta with a little of the hot pasta water and a little more oil if necessary. Serve.
