Chocolate brownies
Makes about 16 squares
Ingredients
200g dark chocolate, broken up into small pieces
250g unsalted butter
80g cocoa powder
65g plain flour
1 tsp baking powder
360g caster sugar
4 large eggs
100g toasted hazelnuts, roughly chopped
100g chocolate chips
Method
1. Set the oven to 170C, 150C fan, Gas 3. Line a 23cm square baking tin with non-stick baking paper. Place the chocolate and butter in a heatproof bowl and place over a pan of simmering water to slowly melt.
2. Once the chocolate is melted, allow to cool slightly then fold in the cocoa powder, flour, baking powder and caster sugar
3. In a separate bowl whisk the eggs together and slowly add this to the chocolate mix - the mixture should reach a consistency where it is falling off the walls of the bowl
4. Next add the nuts and chocolate chips (or whatever ingredients you choose to add) and mix
5. Pour the mixture into the baking tin and cook the brownies for 45-50 minutes, slightly longer if you like them firmer
6. Once cooked, remove from the oven and allow them to cool before cutting them into pieces. Serve and enjoy.
