Gok's Canton sauce with prawns and rice

Canton prawns with rice
Ingredients
1 tbsp olive oil
1 large white onion, chopped
5 spring onions, sliced finely
1 clove garlic, finely chopped
4 medium sized tomatoes, chopped
2 tbsp tomato ketchup
1 tbsp oyster sauce
Cup of frozen peas
1 tbsp light soy sauce
Cooked king prawns, shredded cooked chicken or cooked beef strips
White pepper
Tiny pinch salt
Dash sesame oil
To serve
Cooked rice, noodles, or mashed potatoes
Method
Heat the oil in a wok or deep side frying pan on a medium-high heat. Throw in the onions and cook down slightly. Add the spring onions and garlic and continue cooking for a couple of minutes.
Add in the tomatoes and cook until softened
Add the tomato ketchup and oyster sauce and mix together, then stir in the peas, light soy sauce and a splash of water. Turn up the heat and reduce the sauce slightly.
Add the cooked prawns, chicken or beef and heat through thoroughly
Once hot, add some white pepper and the salt (to taste). Stir through the sesame oil and serve with rice, noodles or mashed potatoes!
