Three ways to pimp up your cheese on toast
It’s a lunchtime staple and ultimate comfort food, but could your cheese on toast get even better?! Nisha's in the kitchen with three simple ways to pimp up this British classic - from her Indian inspired cheese, to a twist on the tuna melt - your cheese on toast is about to get sensational.
Nisha Katona’s Indian Cheese on Toast
Serves: 2
Ingredients
100g grated extra mature cheddar 2 tbsp ground coriander 1 tsp cumin powder ½ tsp finely diced green chilli 1 small red onion, finely diced1 tbsp chopped fresh coriander2 slices thick sliced white toastie or bloomer breadSliced red chilli and coriander leaves, to garnish
Method
1. Preheat the grill.
2. Mix together the grated cheese, ground coriander, cumin, green chilli, red onion and coriander in a small bowl.
3. Place the bread on a baking sheet and toast on each side, taking care not to burn - toast the second side more lightly.
4. Carefully sprinkle the cheese mixture onto the light side of the toast, then grill for a further three minutes, or until the cheese is bubbling and golden brown.
5. Finish with a slice of red chilli and a couple of leaves of coriander as garnish.
Nisha Katona’s Cheesy Tuna Melt on Toast
Serves: 2
Ingredients
200g tin of tuna in oil ½ bunch of spring onions, finely chopped 4 tbsp mayonnaise ½ tsp paprika 3 thick slices of granary or wholemeal bread 50g mature cheddar, grated Salt and freshly ground black pepper
Method
1. Drain the tuna and flake it into a bowl. Mix with the spring onions and mayonnaise. Season with salt, plenty of black pepper, and the paprika.
2. Toast the bread under the grill until it’s nicely browned on both sides.
3. Spread the tuna mixture on top of the bread, right up to the edges of the toast. Scatter over the cheese and put back under the grill until the cheese is bubbling.
4. Sprinkle with a little extra paprika to garnish.
Nisha Katona’s Welsh Rarebit
Serves: 2
Ingredients
2 slices of bread2 tsp butter100g strong/mature Cheddar cheese1 tsp Worcestershire sauce1 tsp wholegrain mustard1 tsp flour3 tbsp Guinness
Method
1. Toast the bread on one side only.
2. Put the butter into a pan along with the cheese, sauces and flour. Place the pan over a low heat.
3. Add the Guinness and stir to combine the ingredients.
4. Preheat the grill.
5. Continue to stir the cheese mixture until a smooth paste forms, then pour over the untoasted side of the slices of bread.
6. Put under a preheated grill for a minute, or until golden brown. Serve immediately.
