The Potato Queen shows us how to make the perfect roast potatoes
She’s the Michelin-trained chef, who’s now known as ‘The Potato Queen’ to her millions of social-media followers. TikTok superstar Poppy O’Toole is bringing her life-changing roasting skills to our studio, as she shares the secret to making the BEST potatoes you’ll ever eat. The only catch… they take an eye-watering 15 hours to make! So is it really worth the hassle? Potato connoisseurs Alison and Dermot are finding out.
The potato queen’s 15 hour potatoes
Serves: 6
Ingredients
1.5kg Maris piper potatoes
200ml double cream
4 crushed cloves of garlic
Vegetable oil for deep frying
Salt
Pepper
Method
1. Preheat the oven to 130°C Fan.
2. Peel and slice the potatoes thinly, like a crisp thin.
3. Simmer the cream with the garlic on the stove and season heavily with salt and pepper for 5-10 mins until thick. Season well.
4. Add the slices of potato into the cream.
5. In a lined 1Ib loaf tin, layer the creamy potatoes one by one evenly in lines until the tin is full.
6. Add parchment to the top of the pavé and place in the oven for 3 hours.
7. Once cooked remove from the oven and flatten with something - whether it’s cans, or cooking beans and place in the fridge for 12 hours (or over night).
8. Once the potatoes are set cut your slab of spuds into desired shape.
9. Get a deep pan or deep fat fryer heated to 180°C and deep fry until golden and crispy.
10. Season with salt and enjoy.
