The Gentlemen Baristas cook up coffee treats

We're joined by The Gentlemen Baristas, who show us the unexpected things you never knew you could make with coffee - including salad dressings and ketchups!

RECIPE 1: Chicory and blood orange salad with coffee dressing

The saladIngredients: 1 x white chicory, 1 x red chicory, 1 x medium sized blood orange segmented, 1 x tbs chopped Walnuts, chopped parsley to taste.

Process: Roughly chop all of the chicory and mix with the segments of blood orange, parsley and walnuts.

Cold brew dressingIngredients: Excess juice from the blood orange, 1 x tsp Honey, ½ tsp wholegrain mustard, black pepper, 50ml cold brew coffee.

Process: Add all ingredients for the dressing to a jar, put the lid on and shake vigorously until well mixed together. Pour the dressing over the salad, mix and enjoy!

RECIPE 2: Cold brew ketchup

Ingredients: 500g on the vine tomatoes, 500g cherry tomatoes, 100g soft brown sugar, 100ml white wine vinegar, 150ml cold brew coffee, half a cinnamon stick, 1 x bayleaf, 4 x cloves, 1 tsp fennel seeds, 1 tsp all spice, 1 tsp mace, ½ tsp mustard powder, 1 x slightly crushed garlic clove.

Process: Turn your oven to 200 degrees, 180 if fan assisted. Place the tomatoes (with vine still attached) in to a baking tray.- Season with salt, pepper and some olive oil and then cook until the skins of your tomatoes are slightly 'charred'.- Using a sieve, press the tomatoes through it into a medium sized pan (really press so that you get all of the flesh!). Once you have a puree consistency, add your brown sugar and white vinegar and bring to a gentle simmer.- Add all of the spices into some muslin cloth, tie the top, and pop it into the mixture stirring regularly to ensure the flavours infuse. Total cooking time will be around 40 minutes, but you may want to remove the muslin after 20 minutes so the spices don't overpower the ketchup.

RECIPE 3: Blackberry and raspberry with cold brew

Ingredients: 15ml sugar syrup, 50ml cold brew coffee, 35ml black berry/raspberry juice, 15ml blood orange juice (squeezed), topped up with filtered water.

Process: Add all the ingredients to a cocktail shaker, shake well with ice and serve in a rocks glass
