Shivi Ramoutar's one pan cookie

One pan cookie
Serves: 4
Ingredients
125g unsalted butter, softened
100g golden caster sugar
1 large egg
2 tsp vanilla extract
165g plain flour
1 tsp baking powder
200g milk chocolate chips
½ tsp sea salt flakes
Vanilla ice cream, to serve
Method
1. Preheat the oven to 170℃ fan or gas mark 5 and butter a heavy-based ovenproof frying pan.
2. Beat together the butter and sugar until light and fluffy, then beat in the egg and vanilla.
3. Fold in the flour, baking powder and chocolate chips along with sea salt flakes. Bring together with your hands to make a large ball of cookie dough.
4. Spoon and push down the cookie dough into the greased pan, ensuring the dough is squished up to all the edges of the pan.
5. Bake for approximately 30 minutes until lightly golden on the edges but still gooey in the centre.
6. Top with a large scoop of vanilla ice cream.
