Phil Vickery's posh beans on toast
They’ve become a lockdown lunchtime staple, so Phil Vickery is showing us how to give our beans on toast a posh makeover. From chorizo and paprika to cheesy beans on eggy bread, it's time to ‘bling up’ your beans!
Coriander, honey and chilli baked beans on toast
Preparation time: 5 minutes
Cooking time: 10 minutes
Serves: 2
Ingredients
2 thick slices bread or English muffins, halved, toasted2 tbsp soft salted butterClove of garlic, optional1 x 400g can baked beans1 tbsp unsalted butter, soft¼ tsp red chilli flakes1 tbsp runny honey
4 tbsp chopped fresh coriander
Method
1. Toast the bread or muffins lightly, then spread with a little butter and/or rub with a little fresh garlic
2. Warm through the beans, with the butter, chilli and honey. Add the fresh coriander, do not warm through too much.
3. Top the toast with the beans and serve with more coriander
Chorizo paprika beans
Preparation time: 5 minutes
Cooking time: 10 minutes
Serves: 2
Ingredients
2 thick slices bread or English muffins, halved, toasted2 tbsp soft salted butter1 tbsp any oil60g chopped chorizo1 small onion, finely chopped1 x 400g can beans2-3 tbsp chopped fresh parsley
Method
1. Toast the bread or muffins lightly, then spread with a little butter
2. Heat a small pan and add the oil, chorizo and onion. Cook over a low heat for 10 minutes so the oils and paprika are released.
3. Add the beans and warm through
4. Finally add the parsley and serve on buttered toast or muffins
Balti beans with mint and yoghurt
Preparation time: 5 minutes
Cooking time: 10 minutes

Ingredients
2 thick slices bread or English muffins, halved, toasted1 tbsp Balti or any curry paste1 x 400g can beans1 tbsp salted butter1 tbsp fresh chopped mint2-3 tbsp natural yoghurt1 tbsp mango chutney
Method
1. Toast the bread or muffins lightly, then spread with a little butter
2. Place the paste and beans into a pan and warm through, then add the butter. Once melted add the fresh mint.
3. Spoon the beans onto the toast, top with a little yoghurt, mango and more fresh mint
BBQ chicken, bean and avocado on toast
Preparation time: 10 minutes
Cooking time: 10 minutes
Serves: 2
Ingredients
2 thick slices bread or English muffins, halved, toasted1 x 400g can beansPinch chilli flakes150g bbq chicken chopped into small pieces1 small avocado, cut into small pieces
Method
1. Toast the bread or muffins lightly, then spread with a little butter
2. Place the beans and the chilli into a small saucepan
3. Bring to a simmer and cook down a little until you have a thick mix
4. Remove from the heat and stir in the chicken and avocado
5. Spoon the mix onto the toast and enjoy
Cheesy beans on eggy bread
Preparation time: 15 minutes
Cooking time: 10-15 minutes

Ingredients
1 x 400g can beans2 eggsDash milkSaltPepper2 slices bread2-3 tbsp oil2 tsp yeast extract spread100g strong Cheddar, grated
Method
1. Gently warm through the beans on a low-medium heat
2. Beat the eggs, milk and salt and pepper together in a bowl. Heat the oil in a large frying pan.
3. Dip the bread in the egg on both sides and place into the hot oil and cook for 3-4 minutes, then flip over and cook for the same amount of time.
4. Once cooked, remove from the pan and spread over a little yeast extract evenly
5. Spoon over the warm beans and top with a little cheese
