Phil Vickery's freezable festive sausage rolls
With just six weeks until Christmas Eve, we might as well get our festive food preparations out of the way before lockdown ends in England on 2 December.
Phil Vickery helps to kickstart our Yuletide snacks with his tasty sausage rolls that you can make and then freeze for the big day!
Festive sausage rolls
Preparation time: 20 minutes
Cooking time: 20-25 minutes
Makes: 20 - 24
Ingredients
For the filling
500g good quality sausage meat, not too fatty, 15-20% fat content is perfect
75g finely chopped dried apricots
75g finely chopped medjool dates
100g finely chopped chestnuts
2 tbsp chopped fresh sage
½ tsp ground cloves
For the pastry
500g puff pastry, I prefer ready-rolled
1 egg beaten
Method
1. Preheat the oven to 200°C gas 6
2. In a large bowl, mix all the ingredients for the filling together well and set aside
3. Place the sheets of pastry on a board and cut four 10cm wide strips. Then brush the strips well with the beaten egg.
4. Using a piping bag, pipe the sausage meat mix onto the strips, slightly to one side. Fold over the pastry and seal the edge well. Brush again with beaten egg, then chill well.
5. Cut into small rolls and cook until browned, crisp and cooked through
