Phil Vickery's American-style pancakes
Phil Vickery's on hand in the kitchen to help Emma Willis master one of her all time favourites - fluffy American pancakes! They're the first pick on any brunch menu and the school holidays are the perfect time to enjoy them with the family. Phil’s foolproof recipe will create perfect pancakes, he’ll even have delicious sweet and savoury toppings for them too - yum!
Serves: 4 Preparation time: 20 minutesCooking time: 15 minutes
Ingredients
200g self raising flour85g fine cornmeal2 tbsp caster sugarPinch of salt1 medium egg1 carton of buttermilk, approx. 300mls350g blueberries (optional)
Method
Place the flour, cornmeal, sugar, salt, in a bowl mix well.
Add the egg and buttermilk milk and bring together. You may need to add a little milk if the mix is a little thick. Stir in the blueberries, if using.
Heat 1 tablespoon of vegetable oil in a non-stick frying pan and add 2-3 spoons of mixture to the pan. Let the mixture run in the pan.
After 2 minutes, flip over with a spatula and cook for a further 2 minutes. Repeat the process until all the mixture is cooked.
Serve with your choice of toppings.
