John Torode's passion fruit and mango pavlova

Today John joins us in the kitchen today to whip up one of his favourite puddings - passion fruit and mango pavlova.

Fruit pavlova
Serves: makes about 14
Ingredients
4 large egg whites
185g castor sugar
2 tsp cornflour
1 and a bit tsp of vinegar
a splash of vanilla
For the topping
300ml whipping cream
1 tsp icing sugar
300ml yoghurt
Fruit pulp to decorate and flavour
Method
Preheat oven to 120C or 100C fan. Line a baking sheet with parchment paper
Whisk the egg whites until firm peaks, then slowly add the caster sugar and beat until shiny. Mix together the cornflour, vinegar, vanilla and 1 tbsp boiling water then add to the meringue mixture and beat for a minute.
Dip two large kitchen spoons in boiling water then use to place beautiful quenelles of the meringue mixture onto the lined tray
Bake for 70 – 80 minutes. Take out of the oven and cool - the inside should be like marshmallow and the outside crisp, and crack with the touch of a spoon.
Using a spoon, crack a small hole in the top of the meringue and fill with the cream and yoghurt mixture. Drizzle over the fruit pulp and serve immediately.
