Uncle James' orange pie
Sophie Thompson remembers her uncle's orange pie from when he served it up in his café when she was a little girl. So why not see if you enjoy it as much as she does!

Recipe180g (6oz) butter180g (6 oz) sugar200g (7 oz) biscuits crushed300g (10 1⁄2 oz) white marshmallows125ml ( 4 fl oz) fresh orange juice250ml (9 fl oz) whipped cream3 egg whites50g (1 3⁄4 oz) Pistachio nuts to decorate, chopped
Method1. In a medium pan melt the butter, cool slightly then stir in the sugar and biscuits. Press into a 23cm flan tin and chill for 30 minutes. Wash the pan, then add the marshmallows and the orange juice and melt slowly over a low heat, stirring regularly, then set aside to cool
When the mixture is almost beginning to set whip the cream in a bowl to form stiff peaks and fold through into the orange and marshmallow mixture. In a separate clean bowl, whisk up the egg whites until just stiff and fold through into the orange mixture. Spoon on top of the biscuit base, Spread over with a palette knife or the back of a soon
Put in the fridge to allow to set for a couple of hours. When ready to serve, decorate with chopped pistachio nuts. I think a little drop of rosewater in whipped cream would go with this and make it extra fragrant!
