Nisha's One Tray Summer Roast 🥘
This is the easiest all in one roast - no slaving over a hot stove, Nisha simply roasts the lamb, rice and veg all in one tray, so you can enjoy a roast lamb dinner with an easy twist.Â
One Tray Smokey Summer Lamb With Hazelnut RiceÂ
Serves 6Â
Ingredients
For the lamb rub:
1 large shoulder of lamb
Drizzle olive oil
2 tbsp natural yoghurt
1 tbsp salt
5 cloves garlic pureedÂ
1 tbsp smoked paprika powderÂ
2 tbsp cumin powderÂ
1 tbsp fennel seeds - lightly pounded is optional
For the rice:
3 builders mugs of white basmati rice
6 builders mugs of waterÂ
1 tsp salt
Drizzle olive oilÂ
1 builders mug hazelnuts
12 soft dried prunes or one full tin of prunes with the juice poured in
1 tsp cumin powderÂ
1 heaped tsp turmeric
1 tbsp smoked paprika powderÂ
3 tbsp tomato purée
Method
1. Rub the lamb with the spice rub ingredients and set aside
2. In a large deep baking tray put in all the ingredients for the rice and mix together
3. Then lay the lamb on top - don’t worry about it getting wet
4. Loosely cover with foil and bake at 210C in the oven for 11/2 hours or until the lamb is tender.
5. Take foil off and cook for further 30 min to brown up
6. Serve with thick Greek yoghurt with chopped chives on the side.Â
