Nisha's chicken jalfrezi - The perfect dish to spice up your hump day
If you’re in need of some midweek meal inspiration then look no further. Nisha Katona is back in the kitchen with a curry house favourite - chicken jalfrezi. It’s quick, easy and full of flavour - the perfect dish to spice up your hump day.
Chicken jalfrezi
Serves 4
Ingredients
3 tbsp vegetable oil
2 white onions, finely diced
5 cm or 20g piece of fresh ginger, peeled and grated
4 garlic cloves, peeled and minced
700g diced chicken breast
2 tbsp garam masala
1 tsp cumin powder
½ tsp ground turmeric
¼ tsp chilli powder
400g tinned chopped tomatoes
1tsp salt
2 large green capsicums, deseeded and roughly chopped
1 large green chilli, deseeded and thinly sliced
Method
1. Put the vegetable oil in a large heavy-based pan over a medium high heat. When hot, add the onion, ginger and garlic and cook for 8 minutes until the onions have softened and turned golden brown. Add the chicken and fry until coloured.
2. Add the garam masala, cumin powder, ground turmeric and chilli powder and fry for 2 minutes.
3. Add the chopped tomatoes, salt, green capsicum peppers and chilli. Give everything a good stir together, then turn the heat down to low, cover and simmer gently for 15-20 minutes, or until the chicken is cooked through and tender.
