Nisha Katona's delicious chicken Rogan Josh
Nisha’s back to share one of her favourite night favourites - a delicious chicken Rogan Josh to get you set for the weekend! It’s a rich and warming curry full of flavour, that's slow cooked for a mouthwatering meal.
Chicken Rogan Josh
Serves 4-6
Ingredients
4 ½ tbsp vegetable oil
2 large white onions, medium diced
5cm piece of fresh ginger, peeled and grated
6 garlic cloves, minced
1 tbsp dried fenugreek leaves
2 tbsp garam masala
1 ½ tsp cinnamon powder
1 ½ tsp ground turmeric
½ tsp chilli powder
1 ½ tbsp paprika
4 bay leaves
800g chicken breast and thighs, cut into chunks
2 medium potatoes, quartered
400g tinned chopped tomatoes
450ml water
2 tsp salt
2 tbsp soft brown sugar
Backup jug of water, to loosen the dish
1 handful coriander leaves, chopped
To serve:
Rice or French baguette
Method
1. Put the vegetable oil in a large pan and set over a medium-high heat. When hot, add the diced onions, ginger and garlic with the dried fenugreek leaves, and cook for 10 minutes, or until the onions have softened and turned golden brown.
2. Stir in the garam masala, cinnamon powder, ground turmeric, chilli powder, paprika and bay leaves and fry for 30 seconds.
3. Add the quartered potatoes, chopped tomatoes, water, salt and brown sugar and bring up to the boil, then reduce the heat to low, partially cover, and simmer for around 10 minutes until the potatoes start to soften.
4. Now add the chickens pieces and simmer gently for 35-40 minutes until the potatoes are cooked and the chicken is tender. Add more water, if necessary, to loosen to your taste before serving.
5. Serve with rice and sides of your choice.
