Nathan Anthony's best air fryer recipes

Nathan Anthony - author of bestselling cookbook ‘Bored of Lunch: The Healthy Air Fryer Book’ - is sharing two of his favourite recipes. His sweet potato and chorizo hash and French toast bites will remind us why we all need an air fryer in our lives!

French toast bites with a melted speculoos drizzle

Serves 4

Ingredients

1 good sourdough loaf or bread of your choice

2 eggs, beaten

200ml milk

1 tsp vanilla extract

1 tsp ground cinnamon low-calorie oil spray

1 tbsp caster sugar

2 tbsp smooth speculoos spread (Natan uses Biscoff)

Method

1. Cut up the sourdough or bread of choice into chunks – you can get rid of the crust if you prefer it softer.

2. Combine the eggs, milk, vanilla and cinnamon. Dip the bread chunks into the mixture to lightly coat, shake off the excess, then spray really well with the low-calorie oil and air-fry at 190°C for 6–7 minutes. Once cooked, sprinkle with the sugar.

3.  Melt the Biscoff spread in a microwaveable bowl in the microwave for 50–60 seconds, then drizzle over the toast bites.


Sweet Potato and Chorizo Hash

Serves 3

Ingredients

600g sweet potatoes, peeled and cut into cubes

1 tbsp oil or low-calorie oil spray

1 tbsp paprika

150g chorizo, sliced

1 tbsp light or half-fat butter

½ tsp chilli flakes

1 garlic clove, grated

4 tbsp Greek yogurt

Salt and pepper, to taste

Fresh dill, to sprinkle

Method

1. In a bowl, combine the sweet potatoes, oil and paprika.

2. Air-fry the potatoes at 190°C for 14–15 minutes, and add the chorizo for the last 2–3 minutes.

3. While the chorizo is cooking, put the butter, chilli and garlic in a microwaveable bowl and microwave for 1 minute until the butter is melted.

4. Season the yogurt with salt and pepper.

5. Serve the hash drizzled with the yogurt, then top with the melted garlic chilli butter and sprinkle with fresh dill.
