Michela's five minute Pasta Del Papa

Ready in under 5 minutes - you can't go wrong with salty pancetta mixed with sweet leeks and creamy cheese.
Pasta Del Papa
Serves 2-3
Ingredients
200g tagliatelle or spaghetti
2 tbsp olive oil
80g pancetta, finely chopped
20g salted butter
1 tbsp brown butter
2 small leeks, finely sliced
Fine salt and freshly ground black pepper
75g gorgonzola cheese
Method
1. Cook the pasta in a large pan of salted boiling water until al dente.
2. Meanwhile, heat the oil in a large pan over a medium heat. When hot, lower the heat and fry the pancetta for 2 to 3 minutes, until it starts to crisp up. Remove the pancetta from the pan and set aside.
3. Using the same pan (do not clean it), melt the butter and sugar over a medium heat. Add the leeks and cook gently for about 5 minutes, until softened, stirring often and taking care not to burn them. Return the pancetta to the pan with the leeks and turn off the heat.
4. While the pasta is cooking, add a tablespoon of the pasta water to the sauce and cook over a medium heat for 1 minute. Drain the pasta, then gently stir into the sauce. Season with salt and pepper, crumble over the Gorgonzola and serve immediately.
Tip: If you are not a fan of Gorgonzola, use another crumbly cheese like goat’s cheese or pecorino.
