Served as they are or with a simple tomato sauce and spaghetti, they’re sure to become your go-to summer time dish!
Ma's Meatballs
Serves 4-6
Ingredients
500g minced beef
1 clove of garlic, peeled and finely chopped
100g breadcrumbs
Small handful of chopped parsley
½ tsp chilli powder – optional
100g freshly grated Parmesan cheese
2 medium eggs, preferably free-range or organic
1 tsp fine salt
½ tsp freshly ground black pepper
 1 tbsp olive oil
1 – 2 courgettes, cut into 2cm slices
20 small cherry tomatoes
Method
1. Soak wooden skewers in water.
2. Mix together all the ingredients apart from the oil, tomatoes and courgettes in a large bowl and shape with your hands into walnut-sized balls.
3. Thread a meatball followed with a piece of zucchini and then a tomato onto a skewer, repeating until the skewer is full and with 3cm either end to handle. Repeat with the other skewers.
4. Place the prepared skewers onto a baking tray and drizzle with a little olive oil and seasoning.
5. Preheat the grill, then grill the spiedini for 8-10 minutes until golden and cooked through.
