Gino's lemon chicken with honey and rosemary
Gino's back in the kitchen making the most of our 2017 honey harvest. Freshly jarred from the hives on our roof, Gino’s serving up pollo al limone, miele e rosmarino - that's lemon chicken with honey and rosemary - the perfect midweek dish for the family.

Ingredients
3 lemons25g salted butter2 tablespoons runny honey1 garlic clove, peeled and crushed2 tablespoons fresh rosemary leaves8 chicken drumsticks2 large potatoes, peeled and cut into 2 cm chunksSalt and freshly ground black pepper
Method
Preheat the oven to 190c/ gas mark 5
Squeeze the juice from 2 lemons and pour into a small saucepan. Ad the butter, honey, garlic and rosemary. Place over a low heat for 2 minutes, stirring occasionally; set aside.
Arrange the chicken drumsticks in a large roasting tray. Scatter the potatoes around the chicken and pour over the hot lemon sauce. Cut the remaining lemon into 4 and place in the tray. Stir to ensure everything is evenly spaced. Season with salt and pepper and roast in the oven for 1 ¼ hours, stirring halfway through.
Remove from the oven and serve with a big mixed salad

The lemon and honey make a great sauce for roasting, but you could also use it as a marinade for barbecuing chicken in the summer.
