Summer holidays are in full swing so John’s whipping up a delicious brunch idea for the family - Baked eggs, spinach & spiced tomatoes with ham & cheese toastie fingers!
Baked Eggs, Spinach, Ham And Cream
Serves: 2
Ingredients
For the baked eggs:
40 g butter
4 good handfuls baby spinach leaves
Salt and freshly ground black pepper
3 tablespoons double cream
4 eggs
2 slices Bayonne or other cured ham
For the little toasted sandwiches:
4 slices of white bread
4 slices of cheese (gruyere or similar)
mustard or ketchup
Mayonnaise
Butter
Method
1. Preheat the oven to 200C/gas 6.
2. In a heavy ovenproof frying pan, heat the butter until it turns golden and slightly nutty, then add the spinach and let it wilt.
3. Season, pour in the cream and let it come to the boil.
4. Crack the eggs on top, then very gently lay the ham over them.
5. Transfer the pan to the oven for about 8-10 minutes until the eggs are cooked.
6. For the toasted sandwiches: Butter the bread and then place in a slice of the cheese now add a little of the mayonnaise and either mustard or tomato sauce and top with the other piece of cheese.
7. Place the buttered bread on top and spread the outside with a little mayo.
8. Cut off the crusts and cut into little fingers.
9. Pan fry until crisp and just melting.
10. Serve with the baked eggs.
