John Torode's burgers
Earlier this week, Michelin-starred Chef David Chang rocked the culinary world by saying you should NEVER cook a burger on the barbecue. So, of course, we had to seek the opinion of our BBQ king, John Torode - who’s joining us live from The Broadcaster.
John Torode's burgers
Serves 4 single burgers or 2 double burgers
Ingredients
For the burgers:
250g beef mince
1 tbsp oil
Pinch of salt
Pinch of pepper
4 slices of processed cheese
For the sauce:
3 tbsp mayonnaise
1 tsp Dijon mustard
Pinch of onion salt
Pinch of garlic salt
1 tsp ketchup
To serve:
4 soft burger buns
4 slices bacon, cooked
1 large tomato, thinly sliced
1 large pickle, thinly sliced
¼ iceberg or similar lettuce, shredded
Method
To make the burgers:
1. To make the burger patties simply place the mince in a bowl and mix a little with a fork.
2. Divide the mix into 4 even amounts and roll each into a ball. Take 2 pieces of greaseproof paper and place the ball in the middle. Squash down until it becomes a little larger than the burger bun, it should be quite thin.
3. Make the sauce by mixing all the ingredients together in a bowl to combine.
4. To cook on the hob, heat a large frying pan over a high heat, when hot, brush the patties with some oil and season with salt and pepper. When cooking these indoors, open the doors and windows.
5. Place the patties a few at a time in the hot pan, making sure they sizzle. Cook for 1 minute to 90 seconds and then flip. Cook for a further 1 minute and place a slice of cheese on top. Let the cheese melt.
6. To cook on the BBQ follow the same instructions but make sure your BBQ is good and hot and make sure everything else on the BBQ has been fully cooked and ready to go as the burgers take just a couple of minutes. They can be cooked over flame or on a flat BBQ plate.
7. As the patties cook, split the burger buns into halves or thirds depending on whether you’re making single or double burgers.
8. Once melted, remove the cooked patty from the pan or BBQ and place on a plate to rest.
9. Put the top and bottom of the burger buns into the pan to soak up all the juice and toast a little.
10. To assemble as a single burger, start by placing the sauce first onto the burger bottom, followed by the bacon, burger patty, sliced tomato, sliced pickle, shredded lettuce and some more sauce followed by the top of the bun.
11. To assemble as a double burger, start by placing the sauce onto the burger bottom, followed by the bacon, burger patty and more sauce, then place the middle bun on top, followed by sliced tomato, second burger patty, sauce, sliced pickle, shredded lettuce and then the top of the bun.
