James Martin’s Spanish tapas
After some time away James Martin is finally back in the This Morning kitchen! He’s making his vibrant tomatoes on toast, as well as a delicious lemon anchovy dish - inspired by his recent trip to Spain.
Spanish tapas 2 ways
Serves 4
Ingredients
For Tomatoes on Toast
50ml olive oil
8 slices sourdough
8 tomatoes
1 clove garlic
Pinch of salt
For Spanish Anchovies:
18 Boquerones
1 lemon, segmented
1 garlic clove
Pinch of salt
Few sprigs of parsley, chopped
100ml olive oil
Method
For the Tomatoes on Toast:
1. Drizzle half of the olive oil over the sourdough slices and toast in a dry frying pan until charred.
2. Slice the tomatoes in half and grate them with a box grater over a bowl topped with a sieve.
3. On a chopping board, crush the garlic with some salt until it resembles a fine paste.
4. Mix the crushed garlic and the olive oil into the tomato pulp and spoon on the toast. Serve.
For the Spanish Anchovies:
1. Start by laying the Boquerones on a plate.
2. Place the lemon segments, garlic and salt in a pestle and mortar and pound together.
3. Add the parsley and olive oil to the pestle and mortar and mix.
4. Spoon the mixture over the Boquerones and serve.
