James Martin’s three-ingredient summer pudding
James Martin is back and whipping up a light, French summer pudding, made with just three ingredients it’s so easy to make - almost a light fresh custard, served with fresh fruits and a basil syrup.

Ingredients
For the sabayon
3 egg yolks
50g caster sugar
25ml white wine or marsala wine
Handful strawberries
Handful blackberries
Handful raspberries
Handful blueberries
To serve
Mint sprigs to garnish
A few toasted flaked almonds
Sorbet, optional
Method
1. To make the sabayon, whisk the egg yolks and sugar over a pan of boiling water in a large bowl until a ribbon stage, and add a splash of the wine and gently fold through.
2. Place the fruits onto a plate, and spoon the sabayon over, then blow torch to colour. Decorate with the mint and almonds.
