The sun is shining (for most!), the school holidays are here and the chimes of the ice-cream van can be heard up and down the country. But you don't need to wait for Mr Whippy to enjoy the childhood delight of an ice-lolly.
Armed with some moulds, store cupboard ingredients and the expertise of FoodTuber Karis Layne - we show you how to beat the heat with her guilt-free ice lollies - perfect for parties OR keeping the children entertained over the school holidays.
Serves 4
Ingredients
80g mango, chopped140g natural yoghurt60g water4tsps natural unrefined cane sugar
Method
You can try and make this lolly recipe in 2 different ways...
Option 1: Pushed for time
Whiz up all the ingredients in a blender.
Pour into a mould, leaving a 1cm gap to the top of the mould.
Place sticks and stick holders on top and freeze
Option 2: Spend a little bit more time to make the layered look
In one container whiz the mango, 60g water and 2tsps sugarIn another container, whiz the yoghurt and the other 2tsps of the sugar
Start pouring the mango mixture first (about a quarter of the mould).
Carefully add the yoghurt mixture next, you want it to sit on top of the mango layer, so best to use a teaspoon to spoon in the yoghurt instead of pouring.
Repeat until you have 4 layers to the top, leaving 1cm at the top for the liquid to expand as it freezes.
Place sticks and stick holders on top and freeze!
