Clodagh McKenna's park bench picnic
Monday marked the beginning of the end. And with two people from different households now allowed to meet outdoors and sit in a park for the first time since lockdown began, Clodagh’s celebrating the occasion with her ‘park bench’ picnic.
Half sandwich, half pie, Clodagh’s picnic loaf crams in ham, mozzarella, tomatoes, olives, basil pesto and salami - all accompanied by a cheeky gin-in-a-tin!

Ingredients
1 large sourdough boule4 slices of ham, sliced and folded1 large mozzarella ball, sliced 8 black olives, sliced 1 tomato, slicedBalsamic vinegar, for drizzling1 tbsp basil pesto Olive oil, for drizzlingSea salt and freshly ground black pepper6 fresh basil leaves, torn6 slices of salami 4 butterhead lettuce leaves
Method
1. Slice off the top of the boule and set it aside. Scoop the bread outside of the inside of the boule to create a bread bowl. Reserve the scooped-out bread to feed the birds at the park.
2. Lay folded ham slices in the bottom of the bread bowl. Top with the mozzarella, sliced olives and tomatoes.
3. Drizzle the balsamic vinegar, basil pesto and olive oil over the tomatoes then season with salt and pepper. Top with the basil, salami and lettuce, then cover with the reserved top of the boule.
4. Slice into 4 to 6 wedges, depending on the size of your loaf
